Fun and delicious, this goat cheese based creation is a spooky addition to any Haloween party.
This is something Joe actually imagined "out of his head" about ten years ago and we've been making it every halloween. Get as gory (or not gory) as you like.
INGREDIENTS
Two Trader Joes Blueberry (or cranberry) Vanilla Chevre French Goat Cheese.
Corn puffs (like "Pirates Booty"). The light colored kind. Not bright artificially colored orange ones.
Blueberry jam or jelly.
Apricot jam or jelly (or any other clear translucent fruit jelly, you could even use one with jalapeno to add a little spicy kick).
Crackers or crostini / toast.
DIRECTIONS
Mold the goat cheese chevre logs into a ball each and place next to each other to create a larger "two hemisphere" brain core. This is the goriest part!
Slice the corn puffs with a small knife, creating an even hump shape with a flat bottom.
Carefully press the sliced corn puffs onto the cheese ball brain core. Start at the middle and follow the division between the two halves of the cheese ball so there is a clear differentiation showing between the left and right sides of the "brain."
Add some blueberry jam around the base of the brain. This will have a blood-like appearance. Get as splatter-y as you like for extra gore.
Thoroughly coat the brain with the apricot jam to create a glaze-like appearance to the ouside of the brain.
Add the crackers or crostini and decorate to your liking. It's also fun to present the dish with a knife protruding from the brain.
