Makes 4 Servings
INGREDIENTS
16 LAMB "LOLIPOPS" AND/OR SMALL LOIN CHOPS.
1/4 CUP OLIVE OIL.
SALT & FRESH GROUND PEPPER TO TASTE.
2 TBSP DRIED OREGANO.
2 TBSP CHOPPED FRESH MINT.
1 TBSP GARLIC POWDER.
2 TBSP SWEET FIG BALSAMIC.
MINT OR ROSEMARY SPRIGS FOR GARNISH.
DIRECTIONS
Combine all ingredients into a large bowl, toss and let sit refrigerated for about 30 mins.
Sear on on a hot grill for about 1 minute each side.
Reduce heat to medium or medium/high and cook for about 2 more minutes each side for lolipops and 3-4 minutes each side for thicker chops.
Remove from grill and let sit for 5 minutes.
Garnish with Mint or Rosemary.
Meat thermometer doneness...
Rare = 120 Degrees.
Medium Rare=125
Medium = 130
Lamb cooked above medium will get tough and gamey.
